The Secret to the Name ‘Insomnia’
Pastry Prime’s Insomnia Brownies are derived from the concept of Insomnia Cookies which were created out of midnight cravings, likeness towards food delivery, and unavailability of anything worth satisfying your soul. Seth Berkowitz founded the concept of insomnia cookies while attending the University of Pennsylvania, USA in 2003. He started making and delivering the warm cookies to students on campus late at night. Currently, Insomnia Cookies operates over 200+ locations and is headquartered in Pennsylvania.

Required Ingredients
- A cup of all-purpose flour
- ½ a cup of cocoa powder (unsweetened)
- ½ a cup of melted and unsalted butter
- A cup of granulated sugar
- 2 eggs
- 1 tsp of vanilla extract
- ½ a cup of dark chocolate chips
- ¼ tsp of salt
- ½ cup of chopped walnuts (optional)
Method
- Preheat the oven to 350°F or 175°C. Grease a baking pan of 8*8 inches.
- In a large bowl, mix the dry ingredients, the cocoa powder, salt, and the flour. Keep it aside.
- Then whisk the sugar, eggs, melted butter, and vanilla in another bowl until the batter turns smooth.
- Gradually add the wet with the dry ingredients. Mix it well until properly combined. Pour in the walnuts and chocolate chips into it.
- Into the baking pan, pour the batter and evenly spread it. Now bake it for around half an hour. Check with a toothpick and insert it into the cake if it’s coming out clean.
- After the brownie settles and cools down, cut them into square pieces. Enjoy them with some vanilla ice cream, or a glass of milk, but don’t forget to share them with your loved ones!
