  • 2 tbsp of melted, unsalted butter
  • ½ a tsp of vanilla extract

For the dough

  • ¼ cup of coarse sugar
  • 1 ½ cups of all-purpose flour
  • ½ cup of unsalted, cold, and small pieces of butter
  • ¼ tsp salt
  • 1 large egg white
  • 2- 3 tbsp of ice water

Steps to Whip it Up!

Preparing the dough

  • In a large bowl, add the sugar, salt, and all-purpose flour. Now add the cold-cut butter pieces and mix them until they turn into coarse crumbs with the help of either your fingers or a pastry cutter.
  • Until the dough comes together, mix the egg yolk by gradually adding ice water, 1 tbsp at a time. Keep mixing until it converts the dough into a ball.
  • Flatten the dough and wrap it in a plastic in the form of a disk. Make sure you refrigerate it for around 30 minutes.

Preparing the almonds for topping

  • In another smaller bowl, mix the sliced almonds, vanilla extract, and sugar. In that preparation, add the lightly beaten egg white and then stir with them until nicely coated.

  • Mix some unsalted butter with honey in another bowl and keep it aside.

Assembling the almonds with the dough

  • Preheat oven at 175°C or 350°F. Now, roll the chilled dough on a lightly floured surface to around 1/4-inch breadth. The dough must be cut into strips that are 4-5 inches in length and 1 inch in breadth.
  • On a baking sheet, keep the dough strips lined with parchment paper. Then brush the honey-butter mixture on each of the strips.
  • Now properly scatter the almond mixture over all the dough strips, and press them gently to make sure the sliced almonds stick to the strips.

Baking the sticks

  • In a preheated oven, bake them for around 15 minutes, or until the almonds are toasted or the edges look golden brown.
  • After 15 minutes, let them cool down and then enjoy with your family with some coffee or tea.

French Palmier: A Heartfelt Story of Sugar and Butter at Pastry Prime

Imagine biting into a heartfelt buttery and crispy cookie melting into your mouth, eventually creating a sensation in your heart. French Palmier is the name of such magic! Delicate yet crispy, sweet yet salty, and charming yet sweet- a tea-time cookie and the choice of all cookie lovers worldwide. And now, your favorite cookie is available at your nearest Pastry Prime store in Guwahati.

An Elegant Name with an Elegant Taste

With a caramelized crust, the cookie has a puff pastry with a flaky texture and rich flavour. A short term for ‘palm tree leaf’ or ‘elephant ears’, these palmiers are a delightful choice for any occasion. These are perfect snacks to be savored at any time of the day, be it for a cozy breakfast with your preferred choice of beverage, or an evening snack. Apart from the standard plamiers, these come in different flavors and varieties that can be achieved by fine-tuning a few ingredients.

A cinnamon palmier requires grounded cinnamon, on the other hand, a cheesy version can be created just by sprinkling a handful of grated black pepper and parmesan cheese. Again, to feel the flavours of sun-dried tomatoes on your palmiers, you can savor this version where the same are finely chopped over the dough and baked along with a thin pesto layer and garlic.

From Paris to Beyond: The Sweet Journey of Palmiers Around the World

Let us travel the world with the French Palmier! Spreading its buttery wings, this beauty has traveled across countries. In Spain, these are known as orejas, and they come with a Spanish flair. Húdié sū is the Chinese version of this cookie which literally translates to butterfly pastries. In Germany, they are dearly called ‘pig’s ears’, maybe because they appear to be delightfully resembling a piglet’s floppy ears. In India, French palmiers are better known as French hearts.

These cookies are often available at local tea stalls in India. With a dip of this cookie in the hot masala tea, it surely tastes heavenly! The best aspect of these cookies is that they can be made at home easily, but the laminated dough requires mastery over baking. For a hassle-free experience with these palmiers, visit Pastry Prime!

Interests in History!

Although its name suggests a French connection, the origin of the same is quite uncertain. They were likely invented in the 19th century, arguably in Austria. Historians find an association with Middle Eastern recipes like phyllo resembling a laminated dough.
