For the base (of pastry)

  • 1 tsp of baking powder, ½ tsp of baking soda and ¼ tsp of salt
  • 1 ½ cups of all-purpose baking flour
  • ½ a cup of unsalted butter at room temperature
  • 2 eggs
  • A cup of granulated sugar
  • 1 tsp of vanilla essence
  • ½ cup chopped, crushed, and drained pineapple
  • ½ a cup of pineapple juice
  • 1 tbsp of pineapple zest

For the topping

  • ½ tsp vanilla essence
  • 1 cup whipped heavy cream
  • 2 tbsp of powdered sugar
  • Cherries (to garnish)
  • Lime zest (to garnish)
  • 1 ½ cup of crisped coconut flakes

For cream filling

  • ½ tsp of vanilla essence
  • 3 tbsp cornstarch
  • ¼ cup granulated sugar
  • 1 cup coconut milk
  • ½ cup of heavy cream

Preparation of pastry base

  • Properly grease and then flour a cake pan. Meanwhile, preheat the oven to 350o
  • In a different bowl, whisk the flour, baking soda, baking powder, and salt and then set it aside. Beat the mixture along with sugar and butter until it becomes fluffy and light.
  • Then one at a time, add the eggs and beat after each addition. Put in the vanilla essence and keep whisking.
  • Very gradually add the dry ingredients and then the wet ones, alternating along with pineapple juice. Combine until properly mixed.
  • Include the pineapple zest and crust pineapple.
  • Then pour the entire batter in the prepared pan and evenly spread the same.
  • Bake the batter in the preheated oven for around half an hour or until the toothpick comes out clean when inserted in the center.
  • Now allow the cake to cool down for around 10 minutes in the pan itself.

Preparations of the cream filling

  • In a pan, whisk the heavy cream, cornstarch, coconut milk, and sugar together.
  • Over medium heat, whisk the same until it thickens and starts to boil. Add vanilla essence after removing the same from the heat.
  • Let the mixture cool down at the normal room temperature, then refrigerate it for around an hour to set.

Preparation of topping

  • In a big bowl, beat the powdered sugar, heavy cream, and vanilla essence until a stiff peak forms.

Integrating the pastry

  • After the cake cools down completely, cut the cake horizontally into two layers.
  • Layer the coconut cream filling properly over the bottom part of the cake.
  • Then place the other layer on the top.
  • Now let the whipped cream spread over the sides and top of the cake evenly.
  • Now scatter the erstwhile coconut flakes over the cake.
  • Finally top the cake/ pastry with some lime zest and cherries, the more the merrier.
  • Let the whole preparation rest for a while and then serve and enjoy this absolute delight!
